Traditional Bolognese Sauce
Add olive oil to a stock pot over medium high heat. Add pancetta and cook until crisp.

Remove pancetta to a plate.

Add onion, carrots, and celery and sauté for a few minutes.

Then add the garlic, ground beef, ground pork, and seasonings.

Break up the meat and cook to brown.

Continue stirring.

Add the pancetta back to the pot.

Then pour in the white wine and let it cook to absorb.

Continue simmering.

Pour in the milk and simmer until it’s almost completely absorbed, 20-25 minutes.

When the milk is absorbed, add the crushed tomatoes, tomato paste, and water (or chicken broth).

Add the bay leaves, stir, and continue to simmer.

Cover with lid for part of the time, so the sauce cooks down a bit.

The longer it cooks, the more tender and flavorful this sauce becomes.

Serve the bolognese sauce over fettuccine noodles and top it with Parmesan cheese.

Or serve it over spaghetti squash topped with Parmesan cheese.
