Traditional Vietnamese Fresh Spring Rolls!
Vietnamese Fresh Spring Rolls also known as, Goi Cuon.
You will need: rice paper rounds, romaine lettuce, shrimp, pork loin, cucumber, shredded carrot, cilantro, mint & vermicelli noodles.

Get a rice paper bowl, or a bowl of water to dip/dampen your wrappers.

Completely wet your rice paper. Place 4 shrimp in the middle and a few pieces of pork loin.

Add a few pieces of cucumber and shredded carrot.

Add cilantro, mint leaf, romaine lettuce and vermicelli noodles.

Fold the top half of the wrapper over the veggies, fold the sides into the middle and roll up tight.

1/2 c. peanut butter, 1/2 c. lite coconut milk, 3 Tbsp.lime juice & hoisin, 2 tsp. chili garlic & brown sugar, 2 cloves garlic, chopped peanuts.
