Tres Leches Cake

Preheat oven to 350F. Lightly grease a 9 inch pan with tall sides and line the base with parchment

Lightly measure 1 cup flour and mix with 1.5 tsp baking powder and 1/2 tsp salt

Separate 5 eggs, whites in one bowl and yolks in another

Whip egg whites until soft peaks form - 3 to 4 minutes

Add 1/4 cup sugar in 4-5 increments, whipping till stiff peaks form

Beat yolks and 3/4 cup sugar until fluffy and pale

Add the flour and 1/3 cup milk in two batches

Mix until just combined

Fold in the egg whites in 3-4 additions

Pour into your prepared tin

Bake for 35-45 minutes until a toothpick inserted in the middle comes out clean

Mix 1 cup condensed milk, 3/4 cup evaporated milk and 3/4 cup whole milk

Flip your cooled cake (remember to run a knife along the sides first!)

Poke lots and lots of holes on the cake

Soak the cake with most of the 3 milk mix (what doesn’t easily go through save for serving!)

Whip 1.5 cup cream with 1/4 cup sugar till fluffy

Add 1/2 tsp vanilla

Cover your cooled cake
