Gather all your ingredients and your RockCrock.

Toast 2 cups of coconut in the microwave for 5 min.

Stir every 1 min until toasted through.

Empty 1 white cake mix into your Large Batter Bowl.

Add in 1 cup water, 3 eggs and 3/4 cup plain Greek yogurt.

When mixed through, add in 2 cups of the toasted coconut. Set remaining coconut aside.

Toasted nicely!

Spray your pan lightly and then add in mixture. Don’t worry about wiping down after the coconut. It will all mix together!

Cover your Rock Crock and place in microwave, cooking for 15 min.

While it’s cooking,mix 1 can of condensed milk and 1 can coconut milk in the small batter bowl.

Carefully remove cake from microwave.

Poke holes with a fork, knife or skewer. I used a chopstick! Then pour the milk mixture over the cake.

Let cool for 15 min.

Top with remaining coconut.
