Tri Color Pasta Primavera - Sheet Pan
Preheat oven to 450F (232C). Add 1 cup raw asparagus spears cut into 1 inch + 1 cup sliced red bell pepper (150g) + 1 cup sliced sweet onions (90g)
2 cups sugar pod peas (150g) + 2 gloves minced garlic + 2 tsp Italian seasoning
Drizzle 1 tbsp olive oil + 1 tbsp melted butter. Toss to coat.
Spread the vegetables out on a sheet pan w/ a pc.of parchment. Salt & pepper to taste. Sprinkle 1/2 tbsp grated parmesan cheese. Roast for 10-12 min
While the vegetables are roasting, cook the pasta to al-dente in boiling salted water. Reserve 1/2 cup of the hot pasta water.
Remove the sheet pan once done roasting. Drain & split into 4 individual pasta bowls.
Top the pasta w/ the vegetables.
Sprinkle 2 tbsp of grated parmesan cheese on top of each serving.Serve immediately.
