Trinidad Pastelle Recipe
To a tbsp of hot oil add 1 tsp minced garlic and 1/2 cup minced onion
Add 1 pound minced beef
Add 1/2 tsp black pepper, 1 teaspoon salt
Add grinded leaves of chandon beni and 1/4 cup grinded chive
Cook till tender then remove from heat. Add raisins, capers, olives
To 2 cups of corn flour add hot water, 4 tbsp vegetable oil, 1 tsp sugar, 1 tsp salt
Form into a sticky dough
Scoop into balls and set aside. Cover with a damp cloth
Oil banana leaf with vegetable oil
Add ball and flatten
Scoop meat into center
Fold top/bottom then wrap leaf in
To 6 qrtz boiling water with salt, add wrapped pastelles
Drain after 30 minutes
