Triple Berry Granola (Vegan)
Preheat the oven to 325 F and line a baking sheet with parchment paper. Set aside.
And 2 cups of frozen mixed berries to a saucepan and heat over medium heat until they soften and start to bubble.
Simmer for 6-8 mins until thickened, stirring occasionally. Set aside.
Mix 3c oats, 1 1/4c pecans, 1/3c walnuts, 1/2tsp pumpkin pie spice, a dash of ground cinnamon, 1/2c maple syrup, and 1/2c SunButter in a bowl.
Stir until everything is well combined.
Pour the warm berries over the oats and mix well. The mixture should be well coated and moist.
Crumble the mixture evenly across the parchment covered baking sheet. Bake for 35-40 mins, rotating the pan once halfway (but not stirring anything).
Once the granola is golden brown on the top & edges, remove from oven and let sit for 15 mins. After it cools, break into desired chunks and enjoy!
