Prep the goodies-cook the bacon @ 425F for 12 min on a sheet pan lined with parchment paper.

In the meantime, cut the onion, cilantro, & and celery. Set aside in a medium mixing bowl. Slice tomatoes.

Remove the bacon from the oven and put between paper towels to soak up the excess oil.

In the mixing bowl with the vegetables, add tuna, 2 tbsp Mayo, 1 tbsp Tiger Smirk, & optional Thai Chili Powder. Mix.

On the same sheet pan you cooked the bacon on (grease drained & parchement removed), put the cheese and tuna on the bread. Bake on 350F for 7 minutes.

Add bacon, lettuce & tomato. (& extra Chili Powder if you like spicy!)

Flip the sandwiches over so the lettuce is on the bottom. Cut and plate.
