Make filling: heat oil over medium heat and cook shallots until softened

Add fresh herbs and garlic and cook another minute until fragrant

Add kale and cook until wilted

Empty out into a bowl and allow to cool to room temperature

Add wild rice blend

Egg, bread crumbs, cranberries & salt & pepper and mix well - refrigerate until ready to use

Lay the butterflied turkey breast skin side down and season generously with salt and pepper

Add stuffing and spread it out evenly leaving a bit of a border

Starting at 1 end, roll the turkey like a jelly roll

Tuck ends in & tie the roast firmly with kitchen twine approx every 2 inches

Transfer to pan with rack seam side down

Baste with softened butter

Generously season with s&p,roast basting a couple of times with maple syrup

Until center of the roulade reaches 155 degrees F, then make gravy (optional)
