Turkey Meatballs With Roasted Tomato Sauce
Grab your cherry tomatoes! Cut some in half and place them all in a large bowl.

Add to the tomatoes some garlic, balsamic vinegar, white wine vinegar, brown sugar, basil & salt.

Preheat your oven to 325F and place the tomatoes into a medium baking dish to roast for 1 hour

Cooking on a low heat creates a gorgeous slightly caramelized sweet & tart roasted tomato sauce!

Trim & peel your celery root. A relative of celery, this root is perfect for making creamy purées!

Chop into cubes & add to a lot of cold water. Add a pinch of salt and bring to a boil. Cook 20 mins.

Place the cubes into a blender with butter, heavy cream, & salt. Purée until smooth.

Starting our turkey meatballs... dice some shallot & garlic.

Flavor with chili flake, salt, pepper, dried oregano, smoked paprika & grated Parmesan cheese.

Add to 16 ounces of ground turkey with 1 egg and 1/3 cup panko. Mix!

Gently roll your meatballs. Be careful not to squish! We want them to be light & flavorful!

Transfer to a parchment lined baking tray and bake for 20 mins at 375F

You should get about 8 meatballs!

Add a generous spoonful of celery root purée to a plate, followed by 2 meatballs, & then the sauce.

Garnish with fresh basil & slivers of Parmesan cheese!
