Turkey Meatloaf Cupcakes
Add the oil, onions and carrots to a pan and season with salt & pepper.

Cook until veggies start to soften. Add mushrooms, oregano, thyme & season with salt & pepper.

Cook until mushroom liquid nearly all evaporates; cool.

Mix turkey, veggies, ketchup, soy sauce, mustard, oatmeal, Worcestershire sauce, egg, & parsley.

Coat cupcake pans with cooking spray.

Add the meat mixture.

Top each “cupcake” with ketchup.

Bake in a preheated 350 degree oven until done.

Add Healthy Mashed Potatoes to a pastry bag.

Top the cooked “cupcakes” with the potatoes.

Sprinkle with parsley.
