Tuscan Chicken Spaghetti
Zest lemon; quarter.

Slice tomato into small wedges.

Peel 2 cloves of garlic; mince using Garlic Press.

Drizzle EVOO on tomatoes. Season with 1 t Italian seasoning, salt & pepper.

Roast tomatoes at 400° for 20 minutes.

Cook 6 oz spaghetti in salted boiling water.

Dry chicken with paper towels. Season with Italian seasoning, salt & pepper.

Coarsely chop 1/2 oz basil.

Heat oil in skillet. Add chicken. Cook 4-6 minutes.

Once cooked, remove chicken from skillet.

Melt 1T butter in skillet. Add garlic, lemon zest, 2T cream cheese, 1/3c pasta water.

Add pasta, 1/4 c Parmesan cheese, juice from 1/2 lemon.

Stir in chicken.

Add tomatoes.

Top pasta with basil & freshly grated Parmesan cheese. Serve with lemon wedge.
