Ultimate Lasagna Bolognese
Heat olive oil in heavy bottom pot

Add onions, celery, carrots

And garlic, cook until tender 8-10 min

Add meat and cook breaking it up while it cooks

Add the tomato paste and cook stirring it in for a minute

Deglaze with the wine if using and add in the herbs and beef or veggie bouillon if using (dash of W sauce is also optional)

Stir in the passata (stained tomatoes) and the crushed tomatoes, bring to a slow simmer, cover and cook stirring often 30 mins

The sauce should be thickened and rich - check seasoning and adjust as needed and stir in the honey or sugar if needed

In the meantime make the béchamel sauce or white sauce starting by melting the butter

Whisk in the flour and cook for a minute then add 1 cup of milk whisk til smooth and then drizzle in the rest of the milk while whisking

Simmer & whisk until thickened - should coat the back of a spoon then remove from heat & whisk in cheese-season with salt and pepper & pinch of nutmeg

Spoon one cup of sauce into the bottom of pan or casserole dish - 9x13

Spread out evenly and layer with pasta sheet

Spoon over approx 2 cups of sauce over pasta

Then approx 1 cup of béchamel -

Sprinkle with approx 1/2 cup of shredded mozzarella

Then repeat - pasta, sauce

Béchamel, and cheese

Last layer will be pasta, remaining suace, remaining béchamel and

remaining cheese. Then place on baking sheet and bake for 25-30 min

until golden and bubbling

Let stand 10 min before slicing

Then serve - ooey gooey and deliciously messy
