Sauté the peanuts until they turn crispy

Add Chana dal and sauté

Add mustard seeds and sauté it until it starts to sizzle

Add sliced onions, curry leaves and sliced green chilies

Add the vangi bath powder and mix well

Add tamarind paste, jaggery and salt.

Now add the rinsed basmati rice and water. Mix well

Close the lid and cook at high pressure for 4 minutes. Open the lid after natural pressure release.

Enjoy Brinjal rice or vangi bath
