Beat 125g softened, unsalted butter until smooth

Gradually add 125g caster sugar and cream together

Add 2 eggs one at a time, mixing well between each one

Sift in 125g self raising flour and 1tsp baking powder (don’t worry if you miss the baking powder)

Fold in the flour and then briefly mix until everything is combined

Add 1tbsp milk and 1/2tsp vanilla extract and mix until combined

Divide between 15 cupcake liners (size dependent)

Bake at 180 degrees (160 fan) for 15 mins

Cool on a wire rack

Topped with chocolate ganache and chocolate curl sprinkles!
