Vanilla Peppermint Cupcakes!
Mix 1 1/4 cups flour with 1 1/4 tsp. baking powder, 1/2 tsp. baking soda & 1/2 tsp. salt.

Mix 2 eggs, 3/4 cup sugar, 2 tsp. vanilla, 1/2 cup vegetable oil. Then alternate 1/2 cup milk with dry ingredients.

Fill liners 3/4 full. Bake at 350° F for 12-16 minutes.

Peppermint Buttercream: 1 c. Crisco, 1 c. soft butter, 6-8 c. Powdered sugar, 3 tsp. vanilla, 3 tsp. peppermint extract. Cream as needed.

Fit piping bag with #827 Ateco star tip. Optional: paint lines with red food gel inside bag.

Fill will Peppermint Buttercream & pipe a circular swirl on cupcakes.

Optional: Melt 12 peppermint candies for 5-8 minutes at 325° F. Cool & use as a topper!
