Vegan Baked Cheesecake (Gluten-Free)
Mix together all the ingredients for the crust in a bowl.

Press along the bottom of a springform baking tin lined with baking paper.

Bake in the oven for 10 minutes.

Place cashews, tofu, maple syrup, lemon juice, cornstarch and vanilla in a food processor.

Whizz until completely smooth.

Pour it over the baked crust.

Bake in the oven for 1 hour. Leave to cool and place in fridge for 2 hours before removing from tin.
