Vegan Balsamic Roasted Cauliflower and Sweet Potato

Chop 2 large sweet potatoes.
Also chop 2 heads of cauliflower.
Place in a large bowl, then add 1/3c balsamic vinegar, 2t each cumin, thyme, garlic powder, onion powder, and salt & pepper to taste.
Stir to combine.
Place the veggies on a foil-lined baking sheet and bake for 40 minutes, stirring halfway through.
Serve and enjoy!
