Vegan Boubon Orange Rice Pudding
Soak 3/4C cashews in boiling water.
In a large saucepan, stir 1/2C arborio rice, 1/2t kosher salt, and 2C water. Bring to a boil. Then turn down the heat and simmer for 20 minutes.
Meanwhile, zest and juice an orange.
Blend in a food processor, adding 1C oat milk, until you achieve a creamy consistency.
After 20 minutes the rice should be soft, but it’s okay if all the water hasn’t evaporated.
Add the cashew cream, orang juice and zest, 1/4C maple syrup, 1/4C bourbon, and 1/2t cloves.
Bring to a simmer and cook uncovered, stirring occasionally, until the rice is tender and the mixture is thick, around 20 minutes.
The pudding should be very thick when finished.
Remove from the heat and serve immediately. Or, chill for 30-60 minutes and serve cold. Garnish with walnuts or orange slices. Enjoy!
