Vegan Bread Pudding (Gluten-Free)
Place the cashew nuts, plant-based milk, maple syrup, vanilla, nutmeg + cinnamon in a food processor.

Whizz until completely smooth.

Spread a thin layer of coconut oil over each slice of bread.

Place one layer of bread slices along the bottom of a baking dish.

Keep layering over more bread slices and raisins.

Pour over the milk mixture, making sure that the bread is completely soaked.

Leave the bread to soak for 5 minutes before baking. Sprinkle over coconut sugar, if desired.

Bake in the oven for 45 minutes, until crispy and golden brown.
