Vegan Butter Chicken With Tandoori Tofu
Start by making a paste with tandoori spice. Break the tofu into chunks and add to the paste.

Mix the tofu into the paste until each piece is fully coated.

Bake for 30 minutes at 400F.

Meanwhile, sauté onions, garlic, and ginger, and add your spices.

Add one can of crushed tomatoes.

Add your tomato mixture, cashew butter, maple syrup, and lemon juice to a blender and blend until smooth.

Return the mixture to the skillet and add 1 can of coconut milk.

Add a little grated nutmeg

Cook over medium heat until the sauce reduces. Add the tofu and mix to combine.
