Vegan Cauliflower Cheese "Christmas Trees"
Gather your ingredients (full list on the blog)

Cut your romansco broccoli into florets then dry fry in a hot wok to part cook them.

Arrange the part cooked florets in an oven proof dish, with the points facing up like little trees

Add 1/4 cup oil and 1/4 cup flour in a pan. Stir over heat to toast the flour. (This removes the flour taste!)

Gently whisk in 2 cups unsweeted plant mylk..

Keep whisking until smooth and no lumps!

Add in 1 Tbsp miso, 1 Tbsp mustard and 1Tbsp nutritional yeast and stir. Add more flavourings for a cheezier taste!

Gently pour the cheezy sauce over the romanesco broccoli

Add some vegan cheese on top and bake for 15-20mins

Serve while hot!
