Vegan Chicken Chow Mein - Hong Kong Style

Boiling water

Enjoy the steam. Let sit a few mins to soften. Then strain the water

Let it dry while you do the other steps. Prepare the sauce. Set aside

Cook the hand shredded mushrooms dry first or with a small amount of water, then add some oil

Pinch of salt. Cook until it has some nice golden color. Then set aside

Warm the wok on med high heat for 3 minutes with oil. Add garlic, then cook sprouts & onions for a few minutes until fragrant. Pinch of salt.

Set aside

Oiled wok. Add noodles.

Continue to mix, until all noodles see coated with oil. Add more oil as needed . Fry until slightly crispy

Once slightly crispy, add sauce. Mix until well coated. Taste & adjust seasonings, adding more sauce or salt as needed

Add in veggies & sprinkle generous amount of white pepper until well mixed. Adjust any seasonings.
