Place the cashew nuts, cacao butter, cocoa powder, maple syrup, vanilla + salt in a food processor.
Whizz until completely smooth. Place in the fridge for 2 hours to firm up.
Use your hands to roll the mixture into balls.
Roll each truffle in cocoa powder.
