Vegan Condensed Cream Of Mushroom Soup
Gather your ingredients: water, mushrooms (frozen, fresh, or canned), cashews, red lentils, salt, pepper, garlic + onion powder, and celery salt.

Add all ingredients to a medium pot and bring to a boil. Simmer on low (covered) for 10 minutes.

Carefully transfer the contents of the pot to your high-powered blender.

Pulse a few times. Then slowly bring the speed to high and blend until creamy.

Immediately pour the mixture into 3 (8-Oz.) mason jars and secure the lids. Let them cool before transferring them to the fridge.

The soup will thicken as it cools and create that classic “Cream of...” soup texture we all know and love!
