Vegan Eggplant “Pulled Pork” Burger (Gluten-Free)
Place the eggplant halves on a baking tray lined with baking paper. Bake in the oven for 30 minutes.

Meanwhile, make the BBQ sauce. Fry the onion and garlic for 10 minutes until softened.

Add the smoked paprika, cumin, tomatoes, dates, tamari, salt + pepper. Bring to the boil and simmer for 10 minutes.

Whizz in a food processor or blender until completely smooth.

Use a fork to shred the flesh of the eggplant once cooked.

Add the shredded eggplant and lentils to the BBQ sauce in the pan. Heat to warm through.

Place some of the "pulled pork" into each burger with coleslaw.
