Vegan Irish Stew with Veggies
Root vegetables and mushrooms cook in a vegetable broth until tender and delicious!
Chop the onions and sauté until soft in olive oil
While onions cook, chop carrots into 1/2 inch pieces.
Next cut the potatoes. Cut two potatoes into thin slices (right) and the remaining potatoes into 1 inch cubes (left).
Layer it up in your dutch oven or pot. Start with the thin sliced potatoes.
Then top the potatoes with the carrots and sautéed onions.
Followed by the cubes of potatoes and mushrooms.
Add bay leaves, thyme, parsley, miso and vegetable broth. Cover with a lid or foil and cook for 45 minutes in 350° F oven or until veggies are tender.
Before serving, taste and add salt and pepper as needed. Garnish with fresh thyme or parsley.
