Vegan Lemon Poppy Seed Muffins
Zest and juice 2 lemons.

Add 2 tablespoons of lemon juice to 1 cups soy milk. Let sit for 10 minutes to curdle.

Make lemon sugar topping- mix sugar and lemon zest.

Make your flax eggs. Ground flax and water

Combine dry ingredients: flour, sugar, baking powder, baking soda, poppy seeds.

Once soy milk has curdled, add oil and lemon juice.

Then your flax egg and mix well. Add to dry ingredients and mix gently until just combined, adding in remaining lemon zest.

Spoon into prepped muffin tin in equal amounts. Sprinkle with lemon sugar topping and bake!
