Vegan Oatmeal Chocolate Chip Cookies
Preheat your oven to 350 and line two cookie sheets with parchment paper
In a medium bowl whisk flour, quick oats, cinnamon, baking soda & salt
In a separate bowl, beat room temperature vegan butter, white sugar and coconut sugar together with an electric hand mixer
Add apple cider vinegar and vanilla and beat again
Stir the dry ingredients in to the wet ingredients and add almond milk. The dough will be thick, so it may be easier to use your hands
Add chocolate chips to the dough
Drop heaping tablespoon sized balls of the dough onto the prepared pan. Do not press them out at all
Bake until the edges are very lightly brown, about 12-13 minutes. The cookies will firm up a lot on the pan once out of the oven
Cool on the pan for 5-10 minutes until set, then transfer to a wire rack to cook completely
