Vegan Palak Tofu

Fry off 400g tofu coated in 1 tsp curry powder & 1/2 tsp kala namak. Set aside.

Put 1 cup soaked cashews in a blender with 1/2 cup of water

Add 230g baby spinach

Blend until smooth then set aside

Put a splash of oil in the pan and one chopped onion

Add 1 tsp chilli flakes

Add 3 tsp garam masala

And 2 tsp coriander powder

Pop in 3 tsp ground cumin powder

And 2 tsp curry powder

Pour in 400ml coconut milk

1/4 & 1/8 cup tomato puree

Pour in the spinach and cashews

Add the tofu back in and enjoy!
