Vegan Pot Pie Casserole
You’ll need: puff pastry, water, soy curls, vegan condensed cream of chicken, potatoes, frozen mixed veggies, onion powder, salt + pepper

Roll your first sheet of puff pastry out until it’s thin and the size of the casserole dish. Use a fork to poke holes in it to keep it from rising...

...and bake at 400F for 15 minutes until browned.

Then, start your filling by boiling the potatoes.

Add the mixed veggies and bring to a boil once again.

Finally, stir in the soy curls, vegan condensed cream of chicken, and spices. Cover and cook 10 minutes.

Carefully pour the filling on top of your baked puff pastry...

...and top with the second sheet of puff pastry, cutting 3 slits down the center. Bake at 400F for 20 minutes.

Let the pie cool 10 minutes before slicing and digging in. Enjoy!
