sauté some onions in olive oil

and lots of garlic

risotto rice goes in

then some salt and lots of stock

and now you might think things have gone wrong but don’t worry!

bring to a simmer ....

stir occasionally until the rice is cooked and it begins to thicken up

you’re looking for a cross between risotto and soup consistency

then finish it off with LOTS of vegan butter and freshly ground pepper

add more salt if it needs it then stir, letting the butter melt to make it rich and luscious

serve with another little dollop of vegan butter and some vegan Parmesan cheese if you have some!
