Vegan Roast Potatoes in 6 Steps

Par-boil 6 large potatoes for 8 minutes, chopped into equal sizes. Then ruffle in a colander

Add 4 tbsp polenta and 1 tsp salt to the potatoes in the colander

Preheat around 100-150ml rapeseed oil in a large baking tray. Add potatoes to hot oil

Pop in the oven for 20 minutes on gas mark 5. Turn and then bake for another 20 minutes.

Timings may vary according to ovens. Leave in a bit longer if you like, until sufficiently crispy!
