Boil potatoes with skin in salted water til fork tender (10-15mins) & cook spinach and squeeze out water & let both cool

Once cool, remove skins, get your flour out & prepare the surface to rice the potatoes. You can also mash, but key is to avoid lumps!

Add the chopped spinach. This was an entire bag!

Mix it all up, keep adding flour until it’s no longer sticky...kinda like pizza dough

Grab some gnocchi dough and form into a log and roll

Keep rolling out with fingers spread until it’s the thickness U like. Remember to keep sprinkling flour so it’s not sticky

Cut into gnocchi pieces. This is where U can use a fork to create designs or different shapes. I’m keeping them simple like little pillows!

These gnocchi are ready to be cooked in boiling salted water for a couple of mins or until they float up. U can also freeze them!
