Vegan Sweet Potato Pie (Gluten-Free)
Peel and slice sweet potatoes and place in a pan. Boil for 15 minutes and drain.

Place in a food processor.

Blend until completely smooth.

Place in a pan with the other ingredients for the filling. Mix well until cornstarch is dissolved.

Cook on a medium heat, stirring regularly, until thickened.

Mix together all the ingredients for the pastry dough.

Press along the bottom and sides of a pie dish.

Pour in the filling.

Bake in the oven for 40 minutes.

Leave to cool and place in the fridge for at least 2 hours before slicing.
