Vegan Thai-Style Jackfruit Coconut Soup
Bring 8c vegetable stock to a boil. Then add 2T minced ginger, 1T minced garlic, 1T liquid aminos, and 2t sriracha. Simmer 10 minutes.
Add 1 can chopped jackfruit, 3c chopped napa cabbage, 8oz shiitake mushrooms, and 1 thinly sliced bell pepper. Simmer 5 minutes.
Add 1 can full fat coconut milk and 1/4c lime juice. Stir and cook until warmed through.
