Vegan Tofu & Pea Ricotta Manicotti
What you'll need
1 Pkg Firm Tofu
Juice of 1 lemon
2 Tbsp Nutritional Yeast
2 Cups Green Peas
Salt And Pepper
Fresh Nutmeg
1 Box Of Manicotti Shells
Tomato Sauce
Garlic Powder
Let’s make the tofu & pea ricotta!
Process it up (except peas) til smooth...add water, oil or plant milk if needed
Add the peas...these are frozen but u can use fresh or canned
Add tomato sauce to tray & start filling up the manicotti! (I used a baggie & snipped the tip)
Line up the filled beauties.
Cover with tomato sauce & some nutritional yeast. Bake at 350F for 45mins.
Let cool 5 mins and enjoy!
