Fry the onion + garlic for 10 minutes until softened.

Add the mushrooms and fry for a further 5 minutes.

Place in a food processor with the walnuts, beans, chestnuts, tomato purée, herbs + seasonings.

Blend briefly until the mixture easily sticks together but still has some texture.

Mix together all the ingredients for the pastry dough.

Place on a sheet of baking paper covered with flour and roll out with a rolling pin.

Shape the filling into a sausage and place it a third of the way in from one side of the pastry.

Roll up the pastry and tuck in the ends. Transfer onto a baking tray lined with baking paper.

Brush with agave syrup + plant-based milk. Sprinkle over mixed seeds.

Bake in the oven for 35-40 minutes, until golden brown.
