Set the instant pot to saute. Saute 1 lb plant-based sliced sausage.

Stir occassionally,until browned. Remove and set aside.

Saute 1 medium diced onion until translucent & 2 large cloves of minced garlic until fragrant.

1-2 diced jalapeno peppers + 2 tsp sweet paprika + 1 tsp chili powder

1 tsp cumin + 1/2 tsp salt + 1 lb browned plant-based sausage chopped into small pieces.

2 cans stewed tomatoes + 3 cups vegetables stock/broth + 1 lb Great Northern Beans

2 pcs bay leaves. Stir to mix in the ingredients evenly. Place the cover and turn to lock the lid.

Cook 40 min. at High Pressure. When done natural release the pressure for 20 minutes.

Add 1 1/2 cups defrosted frozen corn kernels. Mix it in.

Serve w/ optional toppings. Grated sharp cheese, fresh chopped cilantro, sour cream & avocados.
