Vegetable Frittata
What you'll need

Eggs
1 small
Zucchini, chopped
1/2
Onion, chopped
1
Tomato, chopped
1/2 cup
Feta Cheese
1/4 cup
Milk
1/2 teaspoon
Smoked Paprika
1 teaspoon
Kosher Salt
1 teaspoon
Black Pepper
1 teaspoon
Extra Virgin Olive Oil
Preheat broiler. Crack 6 eggs into a bowl.

Add in milk, feta cheese, smoked paprika, and pepper. Whisk well to combine.

In a non-stick, oven-safe skillet over medium high heat, saute onions in olive oil & salt for 5 min.

Add zucchini to the pan and cook for another 3 minutes.

Add tomatoes and cook until most of the liquid has evaporated.

Pour in eggs. Evenly distribute. Turn heat to low. Cook until eggs set up a bit.

Broil until frittata is golden brown on top.

Plate and serve. Garnish ideas: parsley, basil, avocado, hot sauce.
