Vegetarian Chipotle Chili (vegan)
Heat olive oil in large heavy bottom pot

Add all the veggies including the onion and garlic and sauté 5 min until onions are soft and translucent

Stir in the spices and the quinoa

Then add the diced and crushed tomatoes, chipotle peppers, along with the stock/broth or water.

Finally stir in the beans

Bring to a boil then reduce heat, cover & simmer 45-60 min until veggies & beans are tender and quinoa is cooked through, adding more stock as needed
