Vegetarian Thai Curry Recipe
Add oil in a pot. Add ginger + garlic and sautee. Add onions and cook till translucent.

Add Thai curry paste + 2 tablespoons coconut milk and sautee till oil separates.

Add carrots + bell peppers + salt and mix well.

Cook till carrots are almost tender.

Add coconut milk + water + sugar. Let it simmer for 5 to 10 minutes.

Turn off the heat and add fresh lemon juice and soy. Add roughly chopped basil leaves.
