Veggie and Turkey Breakfast Quiche
Preheat oven to 375°F. Brown 10 oz of extra lean ground turkey

* 4 oz cream cheese (1/3 less fat) * 4 lg eggs * 4 c egg whites * 1 c mushrooms * 2 c low-fat Mexican cheese * 1/2 c onion * 1 c bell pepper

Layer 9 x 13 baking dish with turkey, mushrooms, onion and bell pepper

Top with cheese

Soften cream cheese in microwave for 30 seconds. Stir until creamy. Add eggs and egg whites. Mix until well blended.

Pour into baking dish over turkey and vegetables

Bake 35-45 minutes or until center is set and top is golden brown (Yields 8 servings; 241 calories)
