Veggie Flatbread Pizza (Vegan)
Pour 2 tbsp of flax seed meal into a bowl with 5 tbsp water and let sit for 5 mins to gel. Meanwhile preheat the oven to 400F.
Add in 1/4c avocado oil, 1/4c water, & 1 package of Bob’s Red Mill Grain Free Flatbread Mix. Stir well to combine.
On a parchment lined baking sheet, spread out the dough with wet hands until it forms roughly a 10 inch round pizza crust.
Brush a bit of avocado oil onto the unbaked crust. Bake in the oven for about 10 minutes, until crust is lightly golden.
Take the pizza out of the oven and spread 1/4 to 1/2c of pizza sauce evenly onto the partially cooked crust.
Add your toppings. I used 1/4c each vegan cheese, bell pepper, tomato, & red onion, plus 1-2 sliced mushrooms, 2tbsp black olives, & red pepper flakes
Bake for an additional 8-10 minutes, until cheese is melted and veggies are cooked.
Add a fun garnish if you like, then cut the pizza into 8 pieces.
Serve and enjoy!
