Veggie Miso Soup With Noodles (and Salmon)
Add broth to soup pot (any broth would work - I used a low sodium/salt one or you could just use water)

Add aromatics - I used green onions and ginger - you can also add chili’s for more spice and garlic too

Simmer 10 min then remove aromatics with slotted spoon

Whisk in miso paste

Add mushrooms and Bok choy (feel free to add whatever veggie you like here or even tofu)

Portion out precooked noodles into bowls (I cook mine separately and set aside - to prevent them from getting too soggy)

I used brown rice noodles but soba or ramen noodles would work or any noodles you like - Ladle over hot miso veggie soup

Top with your favorite ramen fixings - I used seaweed, sesame seeds, jammy eggs & chopped chili’s (topped with salmon - optional -you can keep it veg)
