Heat 2 tbsp olive oil, add 1/2 cup diced onion

Press 3 garlic cloves, add 1 cup diced bell peppers, 1/4 cup chopped green onions

Add 1 cup chopped broccoli

Add 2 cups spinach... we love our greens.

Add 10 beaten eggs and let it cook for 2 mins

Add 1 cup cheddar cheese, 1 cup mozzarella cheese, cover and cook for 2-3 min on medium low heat

Garnish with green onions
