Veggie Packed Egg Bites
Wash your veggies!

I chopped up some of this leftover zucchini into small pieces

Grab a colorful bell pepper and wash it!

Chop into small pieces

Crack some eggs into a medium large bowl

Add your zucchini and pepper pieces

Mix well and add some salt

Top with black pepper

Add a dollop of sour cream

Add some fiesta cheese and mix well

Tip: use a baggie for a clean way to spread and store your “pan” butter

It works amazing and no mess!

Spoon mixture into brownie pan

Bake on 450°F for 30 minutes

Once done take out and store in container or serve and enjoy!

Tip: Removing items out of the brownie pan before cooling prevents items from sticking!
