Add 4 stalks of lemon grass to blender

Cut and peel about 2-3 inches of fresh ginger & add to blender

Smash garlic & add to blender

Add half an onion

For medium heat - add 2 Serrano peppers and remove seeds

Chop up a lime and squeeze half of it

Add 1 teaspoon of sugar, 1 tablespoon of cumin and 2 tablespoons of coriander

Add 2 tablespoons of soy sauce

Add 2 tablespoons of tamarind paste

Add 2 cups of chopped cilantro

Add a 1/4 cup of water

Add a splash coconut milk & paste to pot or pan and simmer for 5 minutes

Chop & add fresh basil

Chop tofu & veggies and add them in

Add veggie stock

Add the rest of the coconut milk

Stir it up and cook on medium for an hour!
