Add egg and milk. Stir to combine well.

Add dry ingredients and lemon zest. Stir until just combined. Batter will be slightly lumpy.

Gently fold in frozen blueberries.

Once batter is mixed divide into muffins cups.

Bake at 350 degrees for 15-20 minutes for large muffins or 12-15 minutes for minis.

Let cool. Store in an airtight container for up to 3 days.
