Watermelon, Feta, Mint & Fennel Salad

1 bunch chiffonade
Fresh Mint

Extra Virgin Olive Oil
1 bulb sliced thin
Fennel
1/4 slices thin
Red Onion
Slice watermelon into 1-inch rounds.

Cube watermelon. Remove rinds.

In a large bowl add watermelon, feta, onion, fennel, and mint.

Drizzle with olive oil and lemon juice. Carefully toss together.

Turn out into a serving bowl. Top with additional mint.
